Our bulk beef shares are the best value for families wanting premium, ranch-raised beef year-round. Our cattle are pasture-raised and grain-finished with no hormones—ever.
Approximately included in each share:
- 25% Premium Steaks: Ribeye, T-bone, Sirloin, NY Strip
- 35% Roasts & Slow-Cook Cuts: Chuck roasts, brisket, short ribs, stew meat
- 40% Premium Ground Beef
Cut variety based on availability. Choose our Signature Sierra Alta cut sheet or provide custom instructions. Custom orders will receive a cut sheet form via email.
Whole: ~400 lbs | $2,500 deposit + $3,300 final = $5,800 total
Half: ~200 lbs | $1,250 deposit + $1,700 final = $2,950 total
Quarter: ~100 lbs | $750 deposit + $750 final = $1,500 total
Eighth: ~50 lbs | $400 deposit + $375 final = $775 total

Since the 1930’s, when my great-grandfather Richard “Dick” Hille homesteaded in southern NM, our family as been perfecting…..the art of desert ranching. Today, our cattle graze the same pristine range within what's now the Organ Mountains Desert Peaks National Monument. This unique location, combined with four generations of expertise, creates beef that's truly one-of-a-kind.

How much freezer space do I need?
Family Boxes (20-40lbs) fit easily in most home freezers - about the space of a large grocery bag. Quarter beef (~100lbs) needs about 4 cubic feet of freezer space. Half beef (~200lbs) requires about 8 cubic feet. Whole beef (~400lbs) needs 16+ cubic feet - usually a dedicated chest freezer. All our beef is individually packaged and vacuum-sealed for efficient storage.
How does your pricing compare to grocery stores?
Our premium beef costs more per pound than grocery store commodity beef but provides significantly better value than grocery store "premium" options. Compare our Family Box pricing to buying organic, grass-fed steaks at the grocery store - you'll find Sierra Alta delivers better quality at better prices. Plus, you're getting superior craft beef instead of grocery store mystery meat.
What's included in your cut sheets?
Our Sierra Alta Signature Cut Sheet provides perfect family balance: premium steaks (ribeye, strip, filet), versatile roasts (chuck, arm, rump), specialty cuts (brisket, short ribs), and high-quality ground beef. You can also customize completely - more steaks, specific roasts, extra ground beef, or any combination that fits your family's preferences.
Do you use hormones or antibiotics?
We never use growth hormones - period. We use antibiotics only when an animal is sick and needs medical treatment, just like you'd treat your own family. We follow strict withdrawal periods and maintain complete records. This is responsible antibiotic use focused on animal health, not growth promotion.
How long does the beef last?
Vacuum-sealed and frozen, Sierra Alta beef maintains peak quality for 12-18 months. Most cuts are individually packaged, so you can use what you need while keeping the rest frozen. Ground beef and steaks thaw quickly for weeknight meals, while roasts can be moved to the refrigerator the night before cooking.
What if I don't like it?
We're confident you'll love Sierra Alta beef, but if you're not completely satisfied, contact us within 30 days and we'll make it right. Our reputation depends on your satisfaction, and we stand behind every pound we sell.
